I stumbled across this recipe in my recipe box and had to try it! It is the perfect salad or side dish for summer barbecues and potlucks. It’s a great dish for vegans or vegetarians to bring to a party if they know that there will be mostly meat or dairy-type dishes. Chickpeas fill you up and are a good source of protein. However, I think your non-veggie friends will enjoy this too. The dressing is called French dressing which I had never made before. It’s similar to a Thousand Island dressing but I made it a bit healthier. So try making this salad for your next summer party that everyone will enjoy!

- Salad Ingredients
- 2 cans chickpeas, drained & rinsed
- ½ large purple onion, diced
- 1 cup diced carrots
- 1 cup diced celery
- cups romaine hearts, chopped finely
- Dressing Ingredients
- ½ cup reduced fat Veganaise (or regular mayo)
- ¼ cup ketchup
- ¼ cup white vinegar
- ½ teaspoon ground mustard (or Dijon mustard)
- 1 teaspoon garlic powder or garlic salt
- 1 tablespoon granulated sugar
- Salt & Pepper to taste
- Instructions
- Combine the dressing ingredients in a small bowl.
- Mix well to combine and adjust flavors as you like.
- Add more ketchup or sugar if you like it sweeter or more vinegar if you like it tangy.
- Then mix the chopped salad ingredients in a large bowl.
- Pour ¼ cup of the dressing on the salad at a time.
- Once salad ingredients are coated, you can add more salt and pepper at this time.
- Set in fridge for a couple hours or eat right away!
- Mix well to combine and adjust flavors as you like.
Tip: I found this tastes even better when all the flavors sit for a bit. Best served cold. This salad is still great the next day but the romaine lettuce may be a little wilted. Hank says, ‘Ruff!” (Enjoy!).
