Hummus is a great plant based snack that you can take on the go or eat at home with some veggies or crackers. It’s also works as a yummy salad dressing! So if you’re tired of the same ‘ole hummus flavors, here is an alternative with roasted red peppers and pickled jalapeños.

- 1 can garbanzo beans (drained and rinsed)
- 1/4 cup tahini
- 2 garlic cloves
- Juice from 1 lemon
- 2 pieces roasted bell peppers (I used roasted red bell peppers from a jar to make it easy)
2-3 TBSP chopped pickled jalapeños (plus a splash of the juice)
salt & pepper to taste
- 1/4 cup water (add more if hummus is too thick)
- Add everything to blender or food processor (I used a Vitamix).
Blend until smooth. Add more water a little at a time if it’s too thick to blend..
