Hummus is a great plant based snack that you can take on the go or eat at home with some veggies or crackers. It’s also works as a yummy salad dressing! So if you’re tired of the same ‘ole hummus flavors, here is an alternative with roasted red peppers and pickled jalapeños.

  • Ingredients
  • 1 can garbanzo beans (drained and rinsed)
  • 1/4 cup tahini
  • 2 garlic cloves
  • Juice from 1 lemon
  • 2 pieces roasted bell peppers (I used roasted red bell peppers from a jar to make it easy)
    2-3 TBSP chopped pickled jalapeños (plus a splash of the juice)
    salt & pepper to taste
  • 1/4 cup water (add more if hummus is too thick)
  1. Instructions
  2. Add everything to blender or food processor (I used a Vitamix).
    Blend until smooth. Add more water a little at a time if it’s too thick to blend..
