1/2 cup white onion finely diced
1 jalapeño, seeds removed and finely diced
Half a bunch of cilantro roughly chopped
Juice from 1-2 limes
Salt & Pepper to taste

Pear Gorgonzola Flatbread
~
Store bought flatbread or pizza dough
Balsamic glaze
1/2 cup Gorgonzola
1-2 cups Arugula
1-2 pears slices thinly
1 onion caramelized (chop onion and cook in non stick pan with 1 tbsp olive oil on medium low for 15 mins or until soft and slightly golden)
Dash S+P
Preheat oven to 425 F. Place dough on baking pan or pizza pan. Spread ingredients on dough in any order evenly. Add more or less of whatever you like of each ingredient! Bake for 10-15 mins or until Gorgonzola is melted and crust is golden. Remove from oven and let cool for a few minutes. Slice and enjoy!

Roasted Chickpea Salad with Caper Tahini Dressing ~
Dressing:
1/4-1/2 cup tahini
1 garlic clove
2 tbsp capers plus 1 tbsp of brine
1 heaping tbsp Dijon mustard
1 tbsp maple syrup
Juice of half a lemon 🍋
Water to thin
S&P to taste
Put all ingredients in a tall wide mouth jar and blend with immersion blender (or blend in blender or food processor)
